So, I thought there must be some good settings out there by now which will allow me to give this another go.
I found these on Pcars forums which I intend to try. If there are any jumping in the same boat leave some feedback for others

A little update on this.
After playing FM6 for the past 6 or 7 weeks I clicked on Pcars to give it a spin this morning.
I resumed my Formula C career and found the car a bit twitchy ( compared to FM6 ). So I decided to increase the steering ratio to max. in the car tuning menu.
Took it out for practice on the BRNO circuit and LOVED IT. Was able to place the car smoothly and accurately through all the endless sweepers there.
Tried this on the Rocket Bunny and EVO in the new car pack and really liked it there too, just like Forza.
I'm not giving up on this game, it's superior to Forza in many ways. Forza still has it beat in the "pick up and play" friendliness though.
I glad these settings have helped some of you enjoy the game, I'll keep this updated if I come across anything new.
Glad to see you enjoy it. I see many events coming up in the ways of pcars. The game is turning out to be quite incredible with every patch. It's a shame they released it as early as they did and received such a bad wrap and i think many people may have strayed away with no intent on returning. I know we all wanted them to release it as soon as possible, but if they had waited 6 more months they would have released the game with patch 6.0 (maybe), and then there would be many more happy owners rather than disgruntled impatient players.
I think one of the problems that they had/ as do many of these developers is they are very good at their job, the problem is the testers are never as good as the hardcore player/ best players. Many times the testers arent even racing enthusiasts, so they would find about as many problems as the casual player, and even if they are racing enthusiasts I just don't know that they are usually good enough to find the problems/exploits such as the differential glitch in forza 5. That wouldn't have been found by a casual player, nor by an enthusiast that isnt extreme and also into/understands tuning heavily.
I've strayed away from pcars cuz of all the bullshit that was being said and heard, and seeing reviews from other players,i didn't give it the time of day,but have recently been talking to other guys that do play it and of course PTG and my tune is changing and have been seriously contemplating getting the goty edition,if I do get it (probably will) I'll be a thorn in some of ur sides as far as info goes, kinda biting myself for not grabbing it when I should've,but hearing the improvements and changes is extremely encouraging
Benny, i think they just take some time to get used to, otherwise you could adjust the speed sensitivity a little if you want it to feel more forza like.
